Production area: Bolgheri (LI).
Grape varietals: 60% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc
Training system: spurred cordon.
Harvest: done manually in the most optimal time period for each of the three grape varietals used (between beginning and mid September) and with a careful selection of the grapes done directly in the vineyard.
Vinification: the alcoholic fermentation takes place in steel tanks at a controlled temperature for about two weeks.
Ageing: wine ages for 12 months in three different kind of cask: barrique, tonneau and big Italian barrel. Finally it ages for other 4 months in bottle.
Characteristics: it has a deep ruby red color with many violet reflections and presents complex and harmonious scents, pleasantly fruity, and with notes of anise and tobacco. The complexity is completed with pleasant hints of red and black fruits and cinnamon. The taste is full and harmonious, with soft and balanced tannins, combined with a marked minerality.
Food pairings: local dishes including wild boar “alla castagnetana”, game in general, chopped chanterelles, and also grilled red meat and hard cheeses.
Service temperature: 18° C.
Ageing potential: 6 – 8 years.
